Carrot Cake

Veggies never tasted so sweet!

Ingredients

  • 4 large eggs
  • 3 cups carrots grated
  • 2 cups flour
  • 1 cup granulated sugar
  • 1 cup walnuts roasted and coarsely chopped
  • 3/4 cup vegetable oil
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla extract
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon kosher salt

Cream Cheese Frosting

  • 8 oz cream cheese
  • 3/4 cup confectioners sugar
  • 2 teaspoons vanilla extract

Directions

  1. Whisk flour, salt, nutmeg, cinnamon, baking powder, and baking soda in a separate bowl.
  2. In a separate large bowl, mix eggs until lightly frothy.
  3. Add sugar gradually and mix until thick.
  4. Add vanilla extract and oil.
  5. Slowly add flour mixture made in step 1.
  6. Fold in carrots, zucchini, and walnuts with a spatula.
  7. Divide batter evenly into two prepared pans.
  8. Bake for 25 minutes at 350 degrees farenheit.
  9. Meanwhile, mix cream cheese, vanilla, and sugar to make frosting.
  10. Allow cakes to cool completely.
  11. Once fully cooled, place one cake on cake stand and spread half of frosting throughout the top.
  12. Carefully place the second cake on top and spread the remainder of frosting throughout.
  13. Garnish with additional nuts, lemon zest, chocolate,  sprinkles, or decorate with colored frosting.
